Sweet & Savory Kale


It's Friday, and I am so excited to continue my Health Food Fridays series! Today, I'm sharing the recipe for Sweet & Savory Kale (the yummy side dish pictured with last month's Maple-Glazed Salmon). Like I shared before, kale is so super good for you, and it's yummy too! This recipe is my favorite way to prepare this nutrient-dense green veggie. (Pair it with Maple-Glazed Salmon, and you have one of my favorite meals! :)


SWEET & SAVORY KALE (serves 3-4)
- 2 TB. olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 TB. dijon mustard
- 1 1/2 tsp. sugar (I use this whole cane sugar, found in natural food stores)
- 1 TB. balsamic vinegar
- 1 cup chicken broth
- 4 cups (packed) chopped kale
- handful of dried cranberries or raisins
- salt & pepper to taste
- sliced almonds

Heat olive oil in large skillet over medium heat, and saute onions and garlic for about 5 minutes until translucent. Stir in mustard, sugar, vinegar, and chicken stock, and bring to a boil over high heat. Stir in kale. 


Cover, reduce heat to low, and cook for 5 minutes until wilted. Stir in dried cranberries (or raisins) and continue simmering uncovered until the liquid has reduced by half and the cranberries have softened, about 15 minutes.


Season to taste with salt and pepper and sprinkle with sliced almonds. Serve and enjoy!
