Baked Squash & Apples
Nothing beats the flavor of butternut squash and sweet apples covered with a crunchy/gooey pecan topping. I'm a big fan of foods that double as household decorations before they are consumed. Stock up on butternut squash now while they are available and they will stay good for several months. Once you try this recipe, they may not last that long though.
SQUASH & APPLES (serves 4)
-1 butternut squash
-2 baking apples
-3 TB. coconut oil or butter, melted
-1/3 cup unrefined sugar (such as this) or brown sugar
-1 TB arrowroot powder or cornstarch
-1/4 tsp. salt
-1 tsp. cinnamon
-1/4 cup pecans, chopped
Peel and slice butternut squash into 1/2 inch thick slices. (This takes a good knife and a little muscle, but I promise- it's worth it.) Arrange in a 9" x 13" pan. Cut apples into 1/2 thick slices and place on top of squash. Combine remaining ingredients and spoon over squash and apples. Cover and bake at 350° for 40 minutes.
